To create this sparkling wine, only farm-grown apples were used: Golden Delicious, Granny Smith, Braeburn, Fuji and Red Delicious, with other cultivars for the remaining 15%.

How it’s made: The basic cider making process is as follows: grinding the apples (Golden Delicious, Granny Smith, Braeburn, Fuji, and Red Delicious) with an electric rotary blade shredder, pressing the pulp with a steel hydropress, obtaining the apple juice, and activating the alcoholic fermentation.
Nella primavera successiva viene fatta eseguire una seconda fermentazione in bottiglia (secondo il tradizionale metodo classico) a cui segue un affinamento breve sui lieviti, la sboccatura e il dosaggio finale.

Sensory qualities: it has a moderate alcohol content, with a very fine and persistent perlage, with delicate aromas of apple, of sustained freshness.

Allergens: contains sulphites.

Service temperature: 6-8 °C.
